Japanese Chili Paste for Ramen: The Secret of Authentic Ramen Taste


Are you talking about the red paste ball on ramen from ramen shops like Ichiran?

If so, mixing red chili pepper powder, cayenne pepper powder,  white pepper, doubanjiang, and mirin can recreate the chili paste.

But first, do you know what the Japanese chili paste for ramen tastes like?

1. It is something like Kaio-ken for Dragon Ball or beast mode for Evangelion

When your ramen is served, you start to enjoy it as it is.

And then you mix this spicy chili paste,

In order to enjoy your ramen more.

2. The chili paste gives you a nice kick

When I was a kid, I had no tolerance to spicy foods.

The most spicy thing that I ever had was shichimi togarashi powder.

And I used a tiny pinch of it, but it was so spicy that I was sweating…

3. Recipe of chili paste for ramen is mixing these ingredients below

Ichimi togarashi (red chili pepper powder): 5 tablespoons

Cayenne pepper powder: 1 tablespoon

White pepper :1 tablespoon

Doubanjiang or gochujang: 1 and half tablespoon (20g)

Mirin: 100ml (1/2 cup)

4. This chili paste for ramen goes well especially with tonkotsu ramen

I have seen many tonkotsu ramen restaurants have this Japanese chili paste on their ramen.

This is because the chili paste goes well with a thick and creamy soup.

Another ramen type that goes well with this is miso ramen.

Examples are…

Regional miso ramen called Sendai ramen and Akayu ramen.

They both have a spicy paste on them.

Due to Covid, a lot of good ramen restaurants have closed

It makes me feel very angry.

I used to eat ramen out frequently,

But in this situation, 

Ramen shops have started to shorten the hours, limit the number of customers, or even closed their shops.

It has affected the industry so much.

I am afraid good ramen will be gone

But meanwhile, you still can enjoy ramen in the comfort of your own home.

1. Sapporo Ichiban Shio Flavor

MY THOUGHTS OVERALL ★★★★☆

In truth, Sapporo Ichiban delivers a good quality shio ramen experience.

Actually, it is very difficult to find good shio ramen.

Do you know why?

Because it is very difficult to make it since it is very simple.

There are many good shoyu and miso flavored instant noodles out there.

But I feel specifically, the shio flavor market is monopolized by Sapporo Ichiban.

Think about this for a moment having good shio ramen for your dinner with your favorite ramen toppings.

Now, you want some, don’t you?

2. Nissin Raoh Shoyu Flavor

MY THOUGHTS OVERALL ★★★★★

It is nearly impossible to make restaurant quality noodles at home without the right tools and equipment.

How can you beat that?

Using Raoh’s shoyu flavour will help you achieve this easily. This is top-notch ramen hands down!

One pinnacle of instant noodles is the soy sauce flavor. It is expensive compared to regular ones but let me tell you, it deserves every single penny.

In a nutshell, I loved every bit of it.

...And I am sure you will too.

    Oh no, I’m sorry to hear that you don’t have good experience with Shio ramen. I hope you try out the chili paste recipe though!

    Thank you for the chilli paste recipe. When I think of Shio ramen though, I only have unhappy thoughts. I love ramen, but if all the other types of ramen disappeared and only Shio ramen was left, I would not eat it.
